Remembering, Baking, Celebrating

Today is a public holiday in New Zealand. It's ANZAC Day, which is the day we pay our respects for those who have fought to defend our country.
This morning, sacrificing a mid week sleep in (they sacrificed their lives, a sleep in is nothing!), I went to the Dawn Parade in town.

Here's a recipe for Anzac biscuits from the Edmonds cookbook (a NZ institution. Every kiwi home has one!)

Anzac Biscuits
1/2 Cup plain flour
1/3 Cup sugar
2/3 Cup coconut
3/4 Cup rolled oats
50g butter
1 Tablespoon golden syrup
1/2 teaspoon baking soda
2 Tablespoons boiling water

Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup.
Dissolve baking soda in the boiling water and add to butter and golden syrup. Stir butter mixture into the dry ingredients. Place level tablespoons of mixture onto cold greased trays.
Bake at 180C for about 15 minutes or until golden.
Makes 20.

Today is also the birthday of my dear friend Lee. Straight after the dawn parade we went to Lee's house for breakfast with her family where we feasted on pancakes, bananas and maple syrup. Oh, and cupcakes of course!

it's been fun reading your blog too! i grew up in nz (timaru) and miss anzac biscuits - here in the states biscuits are more like scones. it's nonsensical.

Sarah - can you believe the bags are already sold out from Sainsburys?! I'm not sure why they have decided to make them so exclusive when the whole idea is to be eco-friendly and stop people using plastic bags! A little ironic me thinks. But I do still want one!

on the subject of the sainsburys bags (cooments above), i've been wanting one for ages - to actually use for shopping! they came into the stores yesterday for the last time and sold out within minutes - there are now 600+ of them on ebay being sold for upto £150......i'm SO mad about it all! sorry for the rant - had to get it off my chest!

I can't believe that about the Anya Hindmarch bags! Grr! They would be perfect for shopping as seem so large. It seems peculiar to me that they have made them so exclusive, yet they are trying to encourage people not to use plastic bags. A little ironic? Hmm, well I think I will still try and get one for my shopping somehow! Just wish they would make them more readily available.
